When Should You Inject Pork Shoulder?
There are two times during which you should inject pork shoulder:
The first time is right after it has been brined. This is because brining adds moisture to the meat, making it more tender.
Brining also helps to remove any excess salt from the pork shoulder. So if you’ve already done that step, then you don’t need to do anything else.
The second time is at the end of the cooking process. This is because injecting your pork shoulder just before serving it gives the meat a nice aroma and flavor boost.
It also helps to prevent the meat from drying out.
So long as the injection has about 5-10 minutes to spread through the meat, it should work.
Typically, when you marinate meat, it’s best to do it the night before, but is that the same for an injection? Does injecting it the night before have the same benefits?
The answer is yes! Injecting pork shoulder the night before and leaving it to rest is fine so long as it’s kept in the fridge.
However, if your injection contains any acidic ingredients, then you should not inject it the night before. You should aim to inject as close to the cooking time as possible.

How Do I Inject Pork Shoulder?

You’ll want to use a meat syringe here. These are available online or at most grocery stores. They come with different tips and sizes, allowing you to choose one that fits your needs.
If you’re new to cooking, then you may find it hard to get started. But once you learn how to inject pork shoulder, you’ll never go back to grilling again.
1. The first thing you want to do is to cut open the package. Then take out the needle.
2. Then absorb your sauce into the needle.

Moreover, it will take much longer to cook if you inject at this stage. If you want to add flavor or moisture during the smoking process then you should use a spritzer.
What Can I Inject With?
There are many tools you can use for an injection, but the best ones are syringes.
Plastic injectors are cheap and available anywhere. However, they don’t last long and can end up absorbing the flavors of the sauce and contaminating other sauces when re-used.
Stainless steel injectors are a more long-lasting alternative. Though they do cost a bit more and aren’t as freely available as the plastic ones.
If you’re a professional, injector guns are the best tools to use. They’re a lot quicker than the above injectors, last longer, are hella expensive, and look cool to use.
