Smoke a brisket flat is a wonderful thing! A flat, also known as a deckle, is a long, rectangular cut from beef’s breast section. It is typically cooked with indirect heat. To cook a brisket flat, you must first remove the flap (the thick piece of meat on the top), called the point. Then you need to remove the point of the brisket by cutting just below the edge of the bone.<\/p>\n\n\n\n
Next, remove the point of the brisket by cutting it straight across. Now you’re ready to slice the brisket flat. You will have to cut it crosswise on the diagonal. The best way to do this is to hold the brisket flat against the cutting board. Make a small cut along the edge of the brisket, and then make a second small cut perpendicular to the first.<\/p>\n\n\n\n
